Spicy Vegan Lentil Bolognese

Spicy Vegan Lentil Bolognese

The wait is over. My Instant Pot Spicy Vegan Lentil Bolognese is here and it’s BEYOND satisfying. Even meat eaters will love this bolognese! This recipe takes only 10-13 minutes in the Instant pot (once it hits temperature) and requires minimal prep work (let the Instant Pot do the work for you)! This is a great recipe for family #meatlessmonday dinners or if you are looking for a healthy recipe to add to your meal prep! You’ll have leftovers and let me tell you, it tastes even better the next day!

I might be biased but this is the best bolognese I’ve ever tasted. It’s so comforting. It has the perfect amount of spice and the red lentils give it the perfect texture. I’m drooling just writing this.

p.s. I cook mine for 13 minutes because I like it very soft, almost soup like. If you want it firmer, cook for 10-11 minutes)

Now let’s stop wasting time and get to the recipe!

What you’ll need:

1 tablespoon coconut oil

1 cup chopped onion

2 cloves garlic minced

1 cup organic red lentils, rinsed and drained

1 1/2 cup organic vegetable broth

1 jar of marinara sauce (I use Rao’s Tomato Basil Sauce)

carton of organic mushrooms

Spices:

1/4 teaspoon paprika

1/2 teaspoon pink sea salt

1/4  teaspoon chili powder

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

1/2 teaspoon red pepper flakes
