You guys, this sauce isn’t like any Thai sauce you’ve ever tried. It’s the perfect blend of Thai spices, refreshing lime and cilantro, and just “cheesy” enough to give it that extra flare. No joke, this sauce goes with literally EVERYTHING! Don’t believe me? I have three recipes below that perfectly pair with this sauce!
But first things first, let’s make the sauce!
What you’ll need:
1 tbsp oil
2 tsp freshly grated ginger
1 can of Trader Joe’s full fat coconut milk (This is the only coconut milk I can find without any gums)
1 tbsp coconut aminos
2 tbsp Thai Kitchen Red Curry Paste (I get mine from Whole Foods but I’ve linked it on Amazon here)
Juice from 1 lime
1/2 cup nutritional yeast
1/2 cup chopped cilantro
1/2 tsp chili powder
1/2 tsp chipotle spice
In a sauce pan, saute fresh grated ginger in oil for a few minutes, then add all over ingredients and stir occasionally for roughly 10 minutes until warmed all the way through and flavors are fragrant.
Once you have your sauce the possibilities are literally endless!
Like this “Cheesy” lime thai quinoa bowl with roasted sweet potato & stir fry veggies:
To make: Make quinoa with instructions on back of bag, stir fry veggies like asparagus, purple cabbage, broccolini, & carrots. While the veggies cook, roast sweet potato chunks in the oven on 375 for 40-50 minutes. Pour over sauce. Add extra cilantro and a squeeze of lime.
Or these “Cheesy” lime thai chickpea Stir fry collard wraps:
To make: blend 1 can of rinsed and drained chickpeas and 1/2-1 cup thai sauce in a food processor. Stir fry veggies like asparagus, purple cabbage, broccolini, & carrots. While the veggies cook, wash, steam, and prep collard greens. Add chickpeas and veggies to the collard green and wrap.
Or this “Cheesy” lime Thai stir fry with sweet potato noodles:
(you can use regular noodles, spaghetti squash or any type of spiralizled veggie)
To make: Stir fry veggies like asparagus, purple cabbage, broccolini, & carrots. Make noodles, or warm spiralized veggies in pan over medium heat with oil. Load noodles and veggies in a bowl. Top with Thai sauce, chopped cilantro, and a squeeze of lime.
