Spicy Vegan Lentil Bolognese

  • 1 tablespoon coconut oil
  • 1 cup chopped onion
  • 2 cloves garlic minced
  • ¼ teaspoon paprika
  • ½ teaspoon pink sea salt
  • ¼ teaspoon chili powder
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • 1 cup organic red lentils, rinsed and drained
  • 1½ cup organic vegetable broth
  • 1 jar of marinara sauce ( I used Rao's Tomato Basil Sauce)
  • carton of organic mushrooms
  1. Set Instant Pot to sauté mode
  2. Once warmed, add a tablespoon of coconut oil and chopped onion
  3. Saute onion for a few minutes before adding garlic
  4. Saute onion and garlic until the onion is translucent
  5. Add in spice blend and stir together
  6. Stir in washed and chopped mushrooms
  7. Add in vegetable broth, washed and rinsed lentils and marinara sauce
  8. Secure lid, make sure valve is set to seal, and set to manual pressure for 10-13 minutes (depending on desired consistency
  9. Once timer goes off, quick release (I put a towel over the valve so that it doesn't spray everywhere)
  10. Once the Instant pot has stopped steaming, open the lid away from you
  11. Stir and serve over pasta of your choice
